“Ox Eyes” = Ojos de Buey
A type of pan dulce, a sweet-flavored Mexican bread.
Ojo de buey is also known as ojo de Pancha. Pancha is a nickname for Francisca, so a lady must’ve created these in Mexico!
Ojo de buey is a ring of puff pastry filled with a large “eye” that’s like a muffin or pound cake in texture.
The outer ring is flaky or crispy. The generous inner filling is soft and is usually of a darker color for contrast.
